Ingredients
- 4 heads little gem lettuce
- 1 ripe avocado
- 1/2 cup buttermilk
- 1 cup mixed soft herbs (basil, chives, tarragon, parsley)
- 1 tbsp lemon juice
- 1 small garlic clove
- 3 tbsp olive oil
- Toasted pumpkin seeds
- Salt & pepper
Method
Blend the dressing
Blend avocado, buttermilk, herbs, lemon juice, garlic and olive oil until completely smooth and pale green. Season assertively — cold dressings need more salt than you think.
Prep the lettuce
Quarter the little gems lengthwise, keeping the core intact so the wedges hold together. Wash and spin bone-dry.
Plate
Spread a thick pool of dressing on a chilled platter. Arrange lettuce wedges cut-side up over it.
Drizzle
Spoon more dressing into the layers of each wedge.
Finish
Shower with pumpkin seeds, snipped chives, black pepper and a thread of olive oil.
